Prep time: 15 minutes | Cook time: 5-7 minutes | Serves 4

Ingredients : 

12 ounces fresh asparagus spears with tough ends trimmed off
2 egg whites
¼ cup water
¾ cup panko breadcrumbs
¼ cup grated Parmesan cheese, plus 2 tablespoons
¼ teaspoon salt
oil for misting or cooking spray

Directions : 

1. Preheat air fryer to 390°F.
2. In a shallow dish, beat egg whites and water until slightly foamy.
3. In another shallow dish, combine panko, Parmesan, and salt.
4. Dip asparagus spears in egg, then roll in crumbs. Spray with oil or cooking spray.
5. Place a layer of asparagus in air fryer basket, leaving just a little space in between each spear. Stack another layer on top, crosswise. Cook at 390°F for 5 to 7 minutes, until crispy and golden brown.
6. Repeat to cook remaining asparagus.
